It should show in Opportunity under Activity if a payment/deposit is made so that you can refer back. It only shows up if you turn it into a project and look at the payment tab.

Can there be grid lines in the Gantt view? On a project with a lot of tasks, it is difficult to know which day a particular task starts or ends since it's a sea of white. Please add some grid lines to help with this!
